We eat a lot of chicken around here. These crockpot chicken fajitas have to be my favorite. They are colorful, flavorful, and scrumptious. Something just makes me feel like a better mom when I serve a colorful dinner. Anyone else feel this way?

As with any recipe I post, I have to say that you really have to season to your family’s taste. We are a mild household so you may want to add more garlic or onion if you like. We also use the mild taco seasoning of course. So tweak this to suit your taste buds, and enjoy an easy dinner to make for any busy mom!

Easy Crockpot Chicken Fajitas

Prep Time: 15 minutes

Cook Time: 4 hours

Total Time: 4 hours, 15 minutes

Easy Crockpot Chicken Fajitas


  • 2 Chicken Breasts (frozen)
  • 3-5 Bell Peppers (use a variety of colors!)
  • 1 Onion
  • 1/2 Lime
  • 1-2 Tablespoons Minced Garlic
  • 2-3 Tablespoons Taco or Fajita Seasoning (or 1 packet)
  • 1 Package of your favorite Tortillas


  1. Start with the prep by cutting the peppers and onion into slices. Put aside in a bowl, and dump half into the crockpot.
  2. Then place the 2 chicken breasts on top of the pepper/onion mixture.
  3. Squeeze the lime juice from half of the lime all over the ingredients already in the crockpot, and save the other half of the lime for people who may want extra.
  4. I don't measure the seasoning exact because I just sprinkle it on the top to cover everything in a light layer.
  5. Add about a tablespoon of minced garlic.
  6. Empty the rest of your bowl of peppers/onion on the top.
  7. Cook on high for 4 hours or low for 8 hours, or until chicken easily shreds.
  8. Serve with warm tortillas and enjoy!!
  9. Add additional toppings as you like such as sour cream, avocado, salsa, and cheese.

  1. This looks like such an easy dinner idea. Having 5 kids, I’m always looking for easy recipes. And it’s something I know they’ll like! Thanks!

    1. These are toddler approved! Well, as long as they aren’t too “picey” haha. This recipe is also easy if you need to make more or less as long as you have a bigger crockpot. You could add a few extra peppers and a couple more chicken breasts, and be set!

    1. This fajitas recipe is one of my go-tos because it is so easy and delicious. Even my toddler eats it… under a mound of cheese of course. Lol
